Why so many beet seedlings (even when you only planted a few)?

Did you know beet seeds contain multiple plant embryos? This means for every seed you plant, you may get as many as three seedlings! This is why thinning beets in the garden can be laborious, even if we plant them at the proper spacing. One solution: monogerm beet seeds, bred to only contain one plant.
